We use this recipe on our "chipotle Burrito bar night" I copied this recipe from food.com (Is that legal?)
1 teaspoon
vegetable oil or 1 teaspoon butter
2 teaspoons
fresh cilantro
2⁄3; cup white basmati rice
1 cup water
½ teaspoon salt
1 lime
Directions:
1 - In a 2-quart heavy saucepan, heat oil or butter over low heat,
stirring occasionally until melted.
2 - Add rice and lime juice, stir for 1 minute.
3 - Add water and salt, bring to a full rolling boil.(Some people
have had success with 1 cup of water, but when I've made it with 2 it worked for
me).
4 - At boiling, cover, turn down to simmer over low heat until rice
is tender and the water is absorbed, about 25 minutes.
5 - Add in the cilantro and fluff rice with a

Zucchini and Carrots by Steph
1-1/4 cup olive oil
2 carrots, jullienned
3 small zucchini, julienned
4 cloves garlic, crushed with salt
blackpepper or aleppo pepper
Heat the oil and add the carots. Saute, tossing for 2 minutes. Cover and simmer for 3 additional minutes. Increase the heat and add the zucchini and the garlic. Stir-Fry for about 4 minutes, vegables are crisp-tender. Transfer to a serving dish and sprinkle with pepper.
